Ingredients

  • 1 cup Basmati Rice
  • 1 cup Green Peas (fresh or frozen)
  • 2 tbsp Ghee or Oil
  • 1 tsp Cumin Seeds
  • 1 Bay Leaf
  • 2 Green Cardamom
  • 2 Cloves
  • 1 Cinnamon Stick
  • 1 tsp Ginger Garlic Paste
  • 1 Onion (finely chopped)
  • 1 Tomato (finely chopped)
  • 1 tsp Red Chilli Powder
  • 1 tsp Turmeric Powder
  • 2 cups Water
  • Salt (to taste)
  • Coriander Leaves (for garnishing)

Equipment

  • A large pot with a lid
  • A wooden spoon
  • A knife and chopping board

Method

  1. Wash the rice under running water until the water runs clear. Soak the rice in water for 20 minutes.
  2. Heat ghee or oil in a large pot over medium heat. Add cumin seeds, bay leaf, green cardamom, cloves, and cinnamon stick. Fry the spices until fragrant.
  3. Add ginger garlic paste and onions to the pot. Fry until the onions are soft and translucent.
  4. Add chopped tomatoes, red chilli powder, and turmeric powder. Fry the masala until the tomatoes are soft and mushy.
  5. Add green peas and fry for 2-3 minutes.
  6. Drain the water from the rice and add it to the pot. Fry the rice for 2-3 minutes.
  7. Add 2 cups of water and salt to taste. Stir the rice gently.
  8. Bring the water to a boil, then lower the heat and cover the pot. Let the rice cook for 15-20 minutes or until the water is absorbed and the rice is cooked.
  9. Once the rice is cooked, turn off the heat and let it rest for 5 minutes. Fluff the rice with a fork.
  10. Garnish with coriander leaves and serve hot with raita or any curry of your choice.

Notes

  • Soaking the rice helps to cook it evenly and also removes excess starch.
  • You can use any variety of rice, but basmati rice gives the best flavor and aroma.
  • You can adjust the spice level according to your taste.
