- 4 pounds beef short ribs
- 2 tablespoons olive oil
- 1 onion, diced
- 4 garlic cloves, minced
- 1 tablespoon tomato paste
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 4 cups cooked rice, for serving

Method
- Preheat your oven to 325°F.
- Season the short ribs with salt and pepper on all sides.
- Heat the olive oil in a Dutch oven or large pot over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove the short ribs from the pot and set aside on a plate.
- Add the diced onion to the pot and sauté until softened, about 5 minutes. Add the minced garlic and sauté for another minute.
- Add the tomato paste and stir until the onions and garlic are coated.
- Add the beef broth, red wine, soy sauce, brown sugar, Worcestershire sauce, dried thyme, and dried rosemary to the pot. Bring to a simmer and stir to combine.
- Return the short ribs to the pot and spoon the liquid over the top. Cover with a lid and transfer to the preheated oven.
- Bake for 2-3 hours, or until the short ribs are tender and falling off the bone.
- Remove the pot from the oven and use tongs to transfer the short ribs to a plate. Skim off any excess fat from the liquid in the pot and discard.
- Use an immersion blender or transfer the liquid to a blender and blend until smooth.
- Serve the short ribs over a bed of cooked rice, with the sauce spooned over the top.
Notes
