Ingredients

Method

  1. Wash the rice and soak it in water for 10-15 minutes. Drain the water and keep the rice aside.
  2. Heat oil in a pot and add cumin seeds.
  3. When the cumin seeds start to splutter, add chopped onion and green chili. Sauté until the onions turn golden brown.
  4. Add minced garlic and grated ginger. Sauté for a minute.
  5. Add coriander powder, garam masala, and mixed veggies. Sauté for 2-3 minutes.
  6. Add the soaked rice and sauté for 2-3 minutes or until the rice turns slightly brown.
  7. Add water and salt. Mix well.
  8. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes or until the rice is cooked and the water is absorbed.
  9. Fluff the rice with a fork and garnish with chopped cilantro.
  10. Thai Pot Rice is ready to serve.

Notes

You can add any veggies of your choice to this dish. You can also add tofu or paneer for a protein boost.
