Method

1. Rinse the beans and pick out any stones or debris. 2. In a Dutch oven or large pot, sauté the sausage over medium-high heat until browned. Remove from pot and set aside. 3. Add the onion, bell pepper, celery, and garlic to the pot and sauté until the vegetables are soft. 4. Add the bay leaves, thyme, smoked paprika, cayenne pepper, black pepper, salt, and chicken broth to the pot. Stir to combine. 5. Add the beans to the pot and bring to a boil. 6. Reduce the heat to low and let simmer for about 2 hours, or until the beans are tender. 7. While the beans are cooking, prepare the rice according to package instructions. 8. Once the beans are tender, use a spoon or potato masher to mash some of the beans against the side of the pot. This will help thicken the sauce. 9. Stir in the sausage and parsley and let cook for another 10 minutes. 10. Serve the red beans and sausage over a bed of rice.

Notes

This recipe can easily be made in a slow cooker. Simply sauté the sausage and vegetables in a pan before adding them to the slow cooker with the beans, spices, and broth. Cook on low for 6-8 hours, or until the beans are tender.
