Ingredients

Method

  1. Rinse the rice in several changes of water until the water runs clear. Soak the rice in enough water for 30 minutes. Drain and set aside.
  2. Heat ghee in a pan. Add cinnamon stick, cardamom pods, cloves, cumin seeds, and fennel seeds. Sauté for a few seconds until fragrant.
  3. Add sliced onions, green chillies, grated ginger, and minced garlic. Sauté until onions turn translucent.
  4. Add the drained rice and sauté for a few minutes until the rice is coated with ghee and spices.
  5. Add water and salt to taste. Bring it to a boil over high heat.
  6. Reduce the heat to low, cover the pan with a tight-fitting lid and cook for 15-20 minutes, or until the rice is cooked through and all the water is absorbed.
  7. Switch off the heat and let it rest for 5-10 minutes.
  8. Fluff the rice with a fork and serve hot with raita, pickle, or any curry of your choice.
