For the batter:- 1 cup rice flour
- 1/4 cup semolina
- 1/4 cup curd
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped tomato
- 1/4 cup finely chopped capsicum
- 1/4 cup finely chopped coriander leaves
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/2 tsp grated ginger
- 1/2 tsp baking soda
- 1/2 tsp salt
- Water as required
- Oil for frying

Method
- In a bowl, mix rice flour, semolina, curd, onion, tomato, capsicum, coriander leaves, cumin seeds, mustard seeds, grated ginger, baking soda, and salt.
- Add water gradually and mix to form a thick batter. Ensure that there are no lumps in the batter.
- Let the batter rest for 10-15 minutes.
- Heat a non-stick pan on medium heat and add a few drops of oil. Spread the oil evenly on the pan.
- Take a ladleful of batter and pour it on the pan. Spread it evenly to form a thick pancake. If the batter is too thick, add some water to loosen it.
- Cover the pan and let it cook for 2-3 minutes on low heat.
- Flip the uttapam using a spatula and let it cook for another 2-3 minutes on low heat.
- Remove the uttapam from the pan and serve hot with coconut chutney or sambar.
- Repeat the process with the remaining batter.
- Your instant uttapam is ready to be served!
Notes
- You can also add grated carrots or shredded cabbage to the batter for added nutrition.
- Ensure that the batter is thick enough to form a pancake. If it is too thin, the uttapam will not hold its shape.
- Do not flip the uttapam too many times as it may break.
