Ingredients

For the batter:
  • 1 cup rice flour
  • 1/4 cup semolina
  • 1/4 cup curd

  • 1/4 cup finely chopped coriander leaves
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp grated ginger
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Water as required
  • Oil for frying

Method

  1. In a bowl, mix rice flour, semolina, curd, onion, tomato, capsicum, coriander leaves, cumin seeds, mustard seeds, grated ginger, baking soda, and salt.
  2. Add water gradually and mix to form a thick batter. Ensure that there are no lumps in the batter.
  3. Let the batter rest for 10-15 minutes.
  4. Heat a non-stick pan on medium heat and add a few drops of oil. Spread the oil evenly on the pan.
  5. Take a ladleful of batter and pour it on the pan. Spread it evenly to form a thick pancake. If the batter is too thick, add some water to loosen it.
  6. Cover the pan and let it cook for 2-3 minutes on low heat.
  7. Flip the uttapam using a spatula and let it cook for another 2-3 minutes on low heat.
  8. Remove the uttapam from the pan and serve hot with coconut chutney or sambar.
  9. Repeat the process with the remaining batter.
  10. Your instant uttapam is ready to be served!

Notes

  • You can also add grated carrots or shredded cabbage to the batter for added nutrition.
  • Ensure that the batter is thick enough to form a pancake. If it is too thin, the uttapam will not hold its shape.
  • Do not flip the uttapam too many times as it may break.
