- 8 oz. brown rice noodles
- 1 cup of cubed firm tofu
- 1 red bell pepper, thinly sliced
- 1 cup of bean sprouts
- 2 cloves of garlic, minced
- 2 eggs, lightly beaten
- 2 tablespoons of vegetable oil
- 1/4 cup of roasted peanuts, chopped
- 2 tablespoons of chopped cilantro
- 1 lime, cut into wedges
Equipment
- Large pot
- Large skillet or wok
- Strainer
- Bowl
- Cutting board
- Knife
Method
- Bring a large pot of water to boil. Add the brown rice noodles and cook for 3-4 minutes or until they are tender. Drain the noodles and rinse them with cold water. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until they are golden brown on all sides. Remove the tofu and set aside.
- Add another tablespoon of vegetable oil to the skillet or wok. Add the garlic and stir for 30 seconds. Add the red bell pepper and stir for 1-2 minutes or until it is slightly softened.
- Add the cooked brown rice noodles, bean sprouts, and beaten eggs to the skillet or wok. Stir until the eggs are cooked and the ingredients are well combined.
- Add the cooked tofu, chopped peanuts, and cilantro to the skillet or wok. Stir until everything is well combined.
- Serve the Pad Thai brown rice noodles in bowls and garnish with chopped peanuts, cilantro, and lime wedges.
Notes
If you want to add more protein to your Pad Thai brown rice noodles, you can add cooked shrimp, chicken or beef. Also, if you want to make this dish vegan, you can omit the eggs and replace the fish sauce with soy sauce.Nutrition Info
