For the pork:- 2 lbs pork shoulder
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp olive oil
- 2 cups long-grain rice
- 4 cups water
- 1 tbsp olive oil
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/4 tsp black pepper
- 1 can of diced tomatoes (14.5 oz)
- 1 cup of frozen peas
- 1/2 cup of chopped cilantro

Method
1. Preheat the oven to 350°F. 2. Season the pork shoulder with salt and black pepper. 3. Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add the pork and cook until browned on all sides, about 5 minutes. 4. Transfer the pork to a large pot and add enough water to cover the pork. Bring to a boil over high heat. 5. Lower the heat to medium-low, cover, and simmer for 1 hour and 30 minutes or until the pork is tender. 6. Once the pork is done, remove it from the pot and shred it with two forks. Discard any excess fat. 7. In the same pot, heat 1 tbsp of olive oil over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes. 8. Add the cumin, paprika, salt, and black pepper and stir to combine. 9. Add the rice to the pot and stir to coat with the spices. 10. Add the can of diced tomatoes and the water to the pot and bring to a boil over high heat. 11. Lower the heat to medium-low, cover, and simmer for 20 minutes. 12. Add the frozen peas and shredded pork to the pot and stir to combine. 13. Cover and cook for an additional 10 minutes or until the rice is fully cooked. 14. Remove from heat and stir in the chopped cilantro.Notes
