Cook Time

Cooking time for this recipe is approximately 5-7 minutes.

Ingredients

  • 8 oz. rice paper noodles
  • 1 tablespoon vegetable oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup snow peas
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1/4 cup chopped cilantro
  • Lime wedges, for serving

Equipment

  • Large pot
  • Skillet or wok
  • Colander
  • Bowl
  • Whisk

Method

  1. Bring a large pot of water to a boil. Add the rice paper noodles and cook for 5-7 minutes, or until tender. Drain the noodles in a colander and rinse with cold water. Set aside.
  2. In a skillet or wok, heat the vegetable oil over medium-high heat. Add the onion and garlic and sauté until fragrant, about 1-2 minutes.
  3. Add the red bell pepper, carrot, and snow peas and stir-fry for 2-3 minutes, or until the vegetables are crisp-tender.
  4. In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, cornstarch, and water. Add the sauce to the skillet and stir to combine.
  5. Add the cooked rice paper noodles to the skillet and toss to coat with the sauce. Cook for 1-2 minutes, or until the noodles are heated through and the sauce has thickened.
  6. Remove from heat and stir in the chopped cilantro.
  7. Divide the rice paper noodles among serving bowls and garnish with lime wedges.

Recipe Tips

To prevent the rice paper noodles from sticking together, toss them with a little oil after draining and rinsing. This will also help to keep them from drying out. If you prefer your noodles to be softer, soak them in cold water for 30 minutes before cooking. Finally, be sure to keep an eye on the sauce while it cooks - it can thicken quickly, so stir frequently to prevent burning.
